Any of them. Tell us the version and loader when you sign up and the server is set up for it. Modded servers on 1.20.1 use Forge and Java 17, which is what most packs expect.

For most packs, yes, once the server is tuned. We set view distance and simulation distance for the pack you're running instead of leaving the defaults, which is where most "you need 12 GB" advice comes from.
